They ensure the perfect interplay of flavours on the palate, always focussing on the most important thing: the essence of flavour. The native Austrian works to ensure that his dishes always pay tribute to the region and to his roots. Head patissier David Mahn enchants gourmets with picturesque, sweet creations, providing a fitting end to the menu. His colourful and sophisticated desserts convinced the jury of ‘Schlemmer Atlas’, making him ‘Patissier of the Year 2018’.
